Adaiber, along with his team of pickers, harvests only the ripest cherries at El Arrayan farm. Once picked, the cherries are brought to the farm’s sorting area, where the sorting team hand-sorts and floats them to remove any low-density, underripe, or defective cherries.
The cherries then undergo a 45-hour aerobic fermentation, carefully managed by Adaiber following the Cofinet protocol. This controlled process brings out the intrinsic flavors of the coffee, resulting in a cup that is rich, delicate, and deeply connected to its origin.
After fermentation, the cherries are transferred to parabolic dryers. Here, they are spread in thin, even layers and regularly turned to ensure uniform drying, prevent over-fermentation, and avoid mold. Over 10 to 15 days, the natural sugars and flavors of the fruit slowly permeate the beans.
The result is a coffee with intense fruitiness, natural sweetness, and a full body. Adaiber aims for a moisture content of 9.5%–11%, which perfectly preserves the coffee’s unique character and quality.
