Asocafe Tatama is, Santuario’s association of specialty coffee farmers currently uniting 95 families in our hometown. The association was founded in 2012 by our friends Amparo Restrepo, Edier Ramos, Eunilver Castano and many other farmers from our town. Their vision was to have a positive economic and social impact for their members and community by growing, processing, and marketing high quality specialty coffee to the local, national, and international markets, elevating sustainable coffee agriculture, while minimizing environmental impact. Our association’s core goals are to ensure the wellbeing and increase the quality of life of members and their families, with a particular focus on projects supporting and developing women and young people. Asocafe Tatama’s remit includes facilitating the training and development of producers, administrators and specialised labourers in the areas of coffee production and marketing as well as the conservation of natural resources. 

Asocafe Tatama has become an important part of the community and has been a huge influence for the members. Since its inception, the association’s focus on education and intergenerational knowledge-sharing has been key to its success. With the involvement of Café y Procesos , TECNiCAFE  and CQI Q Processing Instructor Hernando  Tapasco, Asocafe Tatama has built a solid foundation of shared skill and processing that feeds back into the community. Now, members like Amparo Restrepo, Sergio Londono,  Alfredo and Eunilver Castano among other, use controlled fermentation and agricultural best practice to make stunning, vibrant coffees that demonstrate the results of their commitment. Their efforts have not gone unnoticed and have inspired a passionate, talented new generation, equipped with expert processing experience, cupping and brewing skills, growing social media followings and a fresh vision of the future. 

The association also has a beautiful Coffee Shop in the town. This project showcases the Association’s Regional coffee, this washed community lot, as well as single farm lots from our fellow members. The young team here is part of the association’s vision of a sustainable future for coffee in the community. It’s inspiring to see the association take ownership of the whole life cycle of coffee as specialty coffee shops in coffee producing communities and countries become increasingly visible. 

Asocafe Tatama’s washed community lot is predominantly amix of Caturra, Variedad Colombia and Castillo varieties consolidated from members’ small farms around our hometown and processed with the technical and processing input from manager Edier Ramos and his young team. It has a fantastic confectionery sweetness and gently rounded acidity which consistently cups at +84, which makes it incredibly versatile.
