The micromill was founded by the Alvarado Fonseca family in 2015 and has made significant improvements since opening. They’ve even placed some of their coffees in the Cup of Excellence finals. The mill processes a range of methods including Fully washed, Natural, Honey and a variety of anaerobic processes.
Variety:
This Natural from Finca Los Tonos is comprised of the high-yielding F1 variety, Milenio and processed at Corazon de Jesus micromill. Milenio is a first-generation (F1) hybrid originating from a cross between rust-resistant T5296 and Ethiopian landrace Sudan Rume. The variety was part of the first wave of F1 hybrid varieties created by a consortium including French research institute CIRAD, a regional network of national coffee institutes in Central America (PROMECAFE), and CATIE. F1 hybrid varieties are still relatively new in coffee agriculture; only a handful have become commercially available to farmers in the last 15 years, and only in select countries.
Processing:
Cherry is selectively handpicked and ripe, red cherry is delivered to the Corazon de Jesus micromill. Cherry is laid to dry on raised beds and is raked frequently to ensure even drying. It takes approximately 10 to 20 days for cherry to dry. Once dry, cherry rests for approximately 2 months before being dry milled and prepared for export.
